One question we often hear at Bistecca Tuscan Steakhouse is whether dry-aged or wet-aged beef is “better.” The answer is simple: they’re different, not better or worse. Each offers a unique eating experience, and the choice comes down to personal preference.

Dry-Aged Beef

Dry-aging involves storing whole cuts of beef in a carefully controlled environment, where temperature, humidity and airflow are monitored over several weeks.
As moisture slowly evaporates, flavours become more concentrated while natural enzymes continue to tenderise the meat.

The result is a steak with:
• Deep, concentrated beef flavour
• Nutty, buttery and earthy notes
• A firmer texture with exceptional complexity
• A distinctive character prized by steak enthusiasts

Because moisture is lost and the exterior must be trimmed away, dry-aging is a labour-intensive process that produces a truly unique steak.

 

Wet-Aged Beef

Wet-aging follows a different path. The beef is vacuum sealed shortly after butchery and allowed to mature in its own juices while the same natural enzymes gently tenderise the meat. Rather than concentrating flavour through evaporation, wet-aging preserves the beef’s natural moisture.

The result is a steak that offers:
