What is a Fiorentina Steak?

A Fiorentina is a thick-cut, bone-in steak taken from the short loin of the animal. Easily recognised by its distinctive T-shaped bone, it features two premium cuts in one.
On one side of the bone sits the striploin (sirloin), prized for its rich beef flavour, firm texture, and generous marbling. On the other is the tenderloin (filet), renowned for its buttery tenderness and delicate texture. Together, they offer the best of both worlds in a single cut.
Traditionally, a true Fiorentina is cut at least three fingers thick (around 4–6cm) and typically weighs between 1kg and 1.5kg, making it a steak designed to be shared.

For this reason, a classic Fiorentina is almost always served rare to medium-rare, allowing the quality of the beef to take centre stage.

Unlike many modern steak preparations, a traditional Fiorentina isn’t covered in heavy sauces or elaborate seasonings. The focus remains firmly on the quality of the beef itself.
